MEET PAUL ROETS
South African-born Paul Roets spent years travelling and cooking in some of the finest boutique hotels in London and Europe before settling in Brisbane in 2004.
Paul has worked in and operated some of Brisbane's most prominent dining venues, including Anise Wine Bar, Isis and Libertine. His unfailingly high standards were recognised with an Australian Good Food and Wine Guide Chef's Hat in 2010 and 2011 for the food he produced at Libertine in Petrie Terrace.
In his role as Chef at The Cafe and The Bistro at QPAC, Paul brings a passion for cooking comforting dishes with a modern twist, following a 'keep it simple' approach and a preference for using the freshest ingredients to heighten our patrons' dining experience.
